Tips For a Great Wedding Menu


First, serve the food you love. It's your wedding--eat what you want!


Second, offer a varitey of foods--vegetarian, meat, and fish. This way there's something for everyone!
Thirdly, try offering different food stations like Thai and Italian.
 
 
Also, remember the time of day that you're getting married. For Example: You don't want to serve heavy sauces or meats at lunchtime.


Try making your menu choices based on the freshest ingredients available in your local area that you're getting married.


Another fun idea is to hire a Mixologist to design signature cocktails for you and your guests.

Eating Healthy: Roasted Vegetable Hoagie


I love a good hoagie just like anyone else! The Roasted Vegetable Hoagie is a great addition to our Healthy Eating series. We hope you will enjoy it!

INGREDIENTS

1 10-inch, loaf of French or Italian bread
1 teaspoon dried basil
1 eggplant, sliced
1 zucchini, sliced
1/2 yellow squash, sliced
1 tablespoon olive oil
Salt and pepper
1 clove garlic, minced
2 lettuce leaves
Fresh mozzarella, sliced
1 tomato
Balsamic vinegar


DIRECTIONS

Preheat oven to 425 degrees. Slice bread and put aside. In large bowl combine eggplant, zucchini, squash, olive oil, salt, pepper, basil and garlic. Place vegetables on a baking sheet covered with foil and bake for 30 minutes. Place lettuce on bread and top with roasted vegetables. Add mozzarella and tomato. Drizzle vinegar over sandwich. Serve.
